RECIPE: LASAGNA ROLL UPS

Lasagna roll up recipe

Not too long ago, I was part of a recipe exchange. This recipe for lasagna roll ups is a result of that exchange (although I can't remember who sent it to me), and it has become a family favourite. It's easier to make than standard lasagna, but it tastes just as good. Best part, it's Monkey approved!

Ingredients:
Package of lasagna noodles
1 cup ricotta cheese
3 cups shredded mozzarella cheese
1 cup shredded Parmesan cheese
2 tablespoons olive oil
1 jar strained tomatoes (650 ml)
2 garlic cloves, minced
1 bunch spinach, chopped

Note: This will make 6-8 lasagna roll ups so you can adjust based on the number you'd like to make. I generally serve 2-3 per person.

Directions:
Heat olive oil in saucepan. Add minced garlic and sauté for one minute. Stir in chopped spinach. Stir in strained tomatoes and bring to a boil. Lower temperature and simmer tomato sauce for at least 30 minutes.

Preheat oven to 350◦F. When the tomato sauce is ready, boil lasagna noodles according to package directions. Drain noodles and toss with a sprinkling of olive oil.

Lay noodles flat, and on each noodle spread ricotta cheese, spread a slick of tomato sauce and sprinkle shredded mozzarella cheese. Roll up each noodle and sprinkle mozzarella cheese and Parmesan cheese on top. Place in a casserole dish and bake for 45 minutes, or until the cheese on top bubbles.

THE BASEBALL HAT


I've shunned the baseball cap all my life in favour of big, wide-brimmed sunhats that I thought gave me the most sun protection. But no longer. I discovered the baseball cap during our trip to Nantucket. Under my wide-brimmed sunhat I'd have to crane my neck to see and hold tight when the wind picked up, but not with my new baseball hat. It is practical, so I wear it frequently giving me more sun protection than the odd time I'd wear my big hat. I'm a convert.

CURRENTLY LOVING: SALTWATER SANDALS

Saltwater Sandals Surfer Model

Saltwater Sandals are the best for kids -- this is the second summer that Monkey has been running around in a pair of the Surfers. Well-made and versatile, these sandals can pound the pavement, run through wading pools, spend the day at the beach and even clean up in the washing machine. One word: amazing.

And, they are so durable that I couldn't help getting a pair of the grown-up Original Sandal in navy blue for myself.

A TRIP TO NANTUCKET


Our summer road trip has (sadly) come to an end. We packed up the car and headed to Nantucket, a small island off the coast of Cape Cod, Massachusetts, with a stop in Boston along the way. We rented a picturesque cottage via HomeAway.com and spent our time playing at the beach, biking the trails, strolling the quaint downtown village and devouring the amazing seafood.
