RECIPE: FOR WHEN YOU'RE UNDER THE WEATHER


 I've been plagued by a bad cold this past week and I'm taking solace in warm, cozy drinks. This Ginger Honey Lemon Tonic is currently my favourite:

Ingredients:
1 cup water
1 inch of ginger root, roughly chopped
1 lemon wedge
1 teaspoon honey

Bring the water and ginger to a boil.
Squeeze the lemon into the water and then drop it in.
Simmer for a few minutes.
Pour into a mug and add honey.

Tonight I might just have to make myself a Hot Toddy. What do you drink when you're feeling blue?

SWADDLING 101


Monkey loved to be swaddled when he was a baby. It was his cozy cocoon. The muslin swaddles from aden + anais are the best. Muslin is a stretchy, breathable fabric so you can easily wrap your baby snuggly. It is also very durable and the more you wash it, the softer it gets. The whimsical designs are a bonus. Monkey is still attached to his blankets and curls up with one during his naps and at night.

RECIPE: STIR-FRIED CHICKEN

This recipe comes from Gwyneth Paltrow's cookbook My Father's Daughter and it is simply the best stir-fried chicken.

Ingredients:
4 skinless, boneless chicken breasts, cut into small cubes
2 tablespoons cornstarch (or 4 tablespoons flour)
Coarse salt
Freshly ground black pepper
2 tablespoons vegetable oil
1/4 cup peeled and minced garlic
1/4 cup peeled and minced ginger
1/2 cup minced scallions
1/2 cup rice wine vinegar
Pinch red chile flakes (optional)
1/2 cup dark brown sugar
2 tablespoons soy sauce
2 tablespoons chopped fresh cilantro

Toss the chicken with the cornstarch, a large pinch of salt and pepper.
Heat the oil in a large nonstick wok over medium-high heat.
Add the garlic, ginger, scallions and chile flakes, cook for 1 minute.
Add the chicken, cook for 5 minutes, stirring occasionally.
Add the vinegar, sugar and 6 grinds of black pepper.
Boil on high for 3 minutes, until the sugar has caramelized, the vinegar has mellowed and the mixture is dark brown and sticky.
Add the soy sauce, cook for another 30 seconds.
Serve with sprinkled cilantro.

Add brown rice, sauteed bok choy and you have a healthy alternative to Chinese takeaway!

THE DAD STEREOTYPE


Huggies recent advertising blunder is making me wonder, is it time to revisit the dad stereotype?

Here's a quick recap on the issue. Huggies launched an advertising campaign showing dads who were too busy watching sports to deal with their babies dirty diapers. An offended dad started a petition asking Huggies to drop the ads and rethink their portrayal of dads. Huggies took action -- pulling the ads, issuing an official apology and now holding roundtable sessions with dads to get their perspective on fatherhood and Huggies products. Owning up to the issue and taking action is good PR.

The number of stay-at-home dads is on the rise. A 2011 Statistics Canada study found that 12 per cent of men are stay-at-home dads, as compared to 4 per cent in 1986. Dads are becoming equal partners in raising their kids.

Dads are often protrayed as fumbling, bumbling beings. Just look at Homer Simpson. I do think it's time to revisit the stereotype of the typical dad. I don't want to lose the humour, but let's refocus it. As a wife and a mother, I want to see dads portrayed in a competent and thoughtful way. I want my son to have a positive sense of who he can become as he grows up.

CURRENTLY LOVING: THIS BEACH BAG


BAGGU has released four fun and colourful prints for summer. The Big BAGGU is the best beach bag ever. I took mine on a family beach holiday last summer and it easily stored three beach towels, sunscreen, hats, snacks and toys for Monkey. It's huge! The ripstop nylon makes it durable and easy to clean after a beach day.

RECIPE: SWEET POTATO FRIES

It was a challenge getting Monkey to eat solid foods. I'm pretty sure he thought pureed foods were beneath him. He finally started eating what we ate (in bite-sized pieces) at nine months, but he had a strong aversion to anything orange.

Then one day my friend Kathryn came over with her little girl Bea. She brought sweet potato fries for a snack and my little monkey gobbled them up. Her secret? Add a sprinkle of cinnamon.

Ingredients:
2 large sweet potatoes, peeled and cut into 1-inch thick sticks
2 tablespoons of olive oil
Cinnamon shaker



Preheat oven to 400◦F.
Toss sweet potatoes with olive oil.
Sprinkle with cinnamon (a light dusting does the trick).
Spread one layer of sweet potato on a baking sheet and bake for approximately 35 minutes (depending on how crispy you'd like your fries).

RECIPE: UN GâTEAU AU YAOURT

France is synonymous with delectable baking. It is after all the country that introduced us to boulangeries, patisseries and of course the baguettte. According to the book Bringing Up Bébé by Pamela Druckerman, it is a tradition for French families to bake together every weekend. Not only does baking bring the family together, it also apparently teaches children the art of patience.

One of their specialities is this recipe for un gâteau au yaourt (a.k.a. Yogurt Cake). Monkey and I made it this weekend -- okay, I did the baking and he did the squealing. It is delicious and fun to make.  







Ingredients:
2 (175g) containers of plain whole-milk yogurt
* save the empty containers to measure the rest of the ingredients
2 eggs
1 container of sugar
1 teaspoon vanilla
Just under 1 container olive oil (or vegetable oil)French Essence
4 containers of flour
1 1/2 teaspoons baking powder
Crème fraîche

Preheat oven to 375◦F.
Use olive oil (or vegetable oil) to grease a 9-inch round cake pan.
Gently combine yogurt, eggs, sugar, vanilla and oil.
In a separate bowl, mix the flour and baking powder.
Add the flour mixture to the yogurt mixture; mix gently until combined (don't overmix).
Add 2 containers of frozen berries (or 1 container of chocolate chips if you're really feeling sweet).
Bake for 35 minutes. It should be crispy on the outside, but springy on the inside.
Serve with a spoonful of crème fraîche.
